There was this other day (some weeks ago, actually) that there was simply nothing on TV (nothing new until here), so I kept on zapping around. Eventually, I came across one of Jamie Oliver’s shows. What really caught my attention (and stomach!) was that he was cooking a long time favorite dish of mine. But that’s not all; he was cooking Portuguese food!!!
I had to watch it.
Even though he made his own version off this recipe, in essence, he was preparing an easy but tasty Bacalhau à Brás. As far as I can remember, I have always been a HUGE fan of this dish, to the point I can eat until my stomach hurts or I feel sick.
This time it was no different… LOL
This is very easy to make and serves easily 4 people (or one hungry Miss B… #noshame).
What you’ll need:
- Salty cod fish – I used 2 medium size slices
- 5 medium size eggs
- straw crisps
- black olives
- olive oil
- garlic
- onion
- pepper
- fine chopped parsley
How to:
- One day prior to prepare this dish, allow the cod fish to get unsalted by dipping it into cold water.
- Punch the cod. Once cooled, rip it apart in small bits.
- In a large frying pan, cook the onions chopped in thin slices with the olive oil until translucent.
- Add the cod and the straw crisps. Once the crisps are getting soft, add the eggs, previously mixed.
- Add all the spices to taste and let it cook until you get a stiff but not hard mixture. It should resemble an omelet, but don’t let it burn! 😉
- Put it on to a plate, garnish with the black olives and chopped parsley.
- Try not to eat all at once! hahaha
As I said, I am a huge fan of this dish! Brings back so many memories from home…
